If Somos Pecadores is fire, Sabia María is wisdom. The same Oaxacan craft, the same ancestral methods, the same family palenque, bottled at a gentler 40% ABV. The result is a mezcal of remarkable elegance: agave character forward, alcohol heat back, perfect for guests new to the category and for connoisseurs who appreciate restraint.

Made from 100% Agave Angustifolia, matured between 7 and 13 years, cooked in conic ovens, crushed by tahona, fermented in pine wood vats, double distilled in copper.

Currently served at Zapote Restaurant, London.

Tasting notes

Crystal clear with silver hue. Mineral aromas and fresh herbs on the nose. The palate is intense yet refined, with fresh grass, mineral notes, and a clean finish of citrus peel.

How we serve it at our supper clubs

Beautiful neat, also opens up in a low-alcohol mezcal cocktail. Pairs with ceviche, fresh tomatillo salsas, and lighter Mexican dishes.
